  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, beat sugar and butter until fluffy. Add molasses and egg; mix until combined.
  4. Gradually add dry ingredients to wet mixture; stir gently until just combined.
  5. Drop tablespoon-sized rounds onto prepared sheets about two inches apart. Bake for 10-12 minutes until slightly firm but still soft in the center.
  6. While cooling, prepare the filling by beating cream cheese, powdered sugar, vanilla extract, and butter until smooth.
  7. Assemble by spreading filling between two cookie halves.
