  • 1/2 cup unsalted butter (softened)
  • 1 large egg

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ground ginger, cinnamon, and a pinch of salt.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and coat each ball in powdered sugar.
  7. Place on prepared baking sheets two inches apart and bake for 10-12 minutes until set but soft in the center.
  8. Allow cooling on the baking sheet for a few minutes before transferring to wire racks.
