  • 1 cup all-purpose flour

  • 2 cups vegetable oil (for frying)

Instructions

  1. Wash and dice the peaches into bite-sized pieces.
  2. In a bowl, mix flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs and milk until smooth; then combine with dry ingredients to form a thick batter.
  4. Gently fold in the diced peaches.
  5. Heat vegetable oil in a deep skillet over medium heat until it reaches 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil and fry for about 2 minutes on each side until golden brown.
  7. Remove fritters from oil and drain on paper towels; dust with powdered sugar before serving.
