French Onion Potatoes are a comforting and flavorful side dish that combines the creamy tenderness of gold potatoes with rich, caramelized onions and gooey melted Gruyère cheese. This easy-to-make recipe is perfect for family dinners or special gatherings, delivering a delightful twist on classic French onion soup.

  • 2 lbs gold potatoes, thinly sliced
  • 2 large sweet yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 1 cup low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 1 cup shredded Gruyère cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt the butter and sauté the sliced onions for 15-20 minutes until caramelized.
  3. Layer half of the sliced potatoes in the baking dish and sprinkle with salt and pepper. Top with half of the caramelized onions. Repeat layers.
  4. Pour beef broth over the layered potatoes and sprinkle thyme on top.
  5. Cover tightly with aluminum foil and bake for about 45 minutes until tender.
  6. Remove foil, add shredded Gruyère cheese on top, and bake uncovered for an additional 10 minutes until golden brown.
