  • 3 cups all-purpose flour (360g)
  • 2 ¼ tsp active dry yeast (7g)
  • ¼ cup unsalted butter, melted (56g)
  • 1 cup warm milk (240ml)
  • 2 tbsp sugar (25g)
  • 1 tsp salt

Instructions

  1. Boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
  2. In a small bowl, combine warm milk with yeast and sugar. Let sit for 5 minutes until frothy.
  3. In a large bowl, mix mashed potatoes, melted butter, salt, and frothy yeast mixture. Gradually stir in flour until a sticky dough forms.
  4. Knead on a floured surface for about 5 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover with a towel, and let rise in a warm spot for about 1 hour or until doubled in size.
  6. After rising, punch down the dough and divide into equal pieces. Shape into balls and place on a greased baking sheet. Let rise for another 30 minutes.
  7. Preheat oven to 375°F (190°C) and bake rolls for approximately 20 minutes or until golden brown.
