  • 1.5 lbs boneless, skinless chicken breasts (about 3 breasts)
  • 1 cup mixed bell peppers (red, green, yellow), chopped
  • 1 medium onion, chopped
  • 2 tsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup enchilada sauce

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat with a dash of olive oil, cook the chicken for about 6 minutes per side until golden brown. Remove from heat and shred.
  3. In the same skillet, sauté chopped onions and bell peppers until tender (about 5 minutes).
  4. In a large bowl, combine shredded chicken, sautéed veggies, taco seasoning, and enchilada sauce; mix well.
  5. Layer half of the mixture in the baking dish and top with half of the cheese; repeat layers.
  6. Bake for 25-30 minutes until bubbly and golden brown.
