Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel (if desired) and cut the potatoes into 1-inch chunks. Rinse in cold water.
  3. Boil the potato chunks in salted water for about 10-15 minutes until just tender. Drain thoroughly.
  4. Return the drained potatoes to the pot and shake gently to roughen edges.
