  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup whole wheat breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. In a bowl, mash the chickpeas until mostly smooth but slightly chunky.
  3. Mix in the breadcrumbs, parsley, garlic powder, cumin, lemon juice, salt, and pepper until well combined.
  4. Form the mixture into small patties about 2 inches wide.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook patties in batches for about 4 minutes on each side until golden brown.
