  1. Sauté the Spinach: In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the fresh spinach and sauté until wilted (about 3-4 minutes). Season lightly with salt and pepper.
  2. Prepare Cheese Mixture: In a bowl, combine crumbled feta and shredded mozzarella. Mix well.
  3. Assemble Quesadillas: Place one tortilla on a flat surface. Spread half of the cheese mixture on one half of the tortilla, top with sautéed spinach, then fold the tortilla over.
  4. Cook Quesadillas: Heat remaining olive oil in the skillet over medium heat. Place folded quesadilla in the skillet and cook until golden brown (about 3-4 minutes per side). Press down gently with a spatula for even cooking.
  5. Slice and Serve: Remove from heat, let cool slightly, then slice into wedges. Serve warm with salsa or sour cream.
