  • 3 lb chuck roast
  • 4 dried guajillo peppers
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • ¼ cup lime juice
  • ½ cup chopped fresh cilantro
  • 12 corn tortillas
  • 2 tsp cumin
  • 1 tsp dried Mexican oregano

Instructions

  1. Rinse and prepare the guajillo peppers by removing stems and seeds. Chop onion and mince garlic.
  2. Blend soaked guajillo peppers, onion, garlic, cumin, oregano, lime juice, and beef broth until smooth.
  3. Trim excess fat from the chuck roast, cut into chunks, and season with salt and pepper.
  4. Place beef chunks into the crockpot; pour blended sauce over them and stir gently.
  5. Cover and cook on low for 6 hours or high for 3 hours until meat is fork-tender.
  6. Shred the meat with two forks and serve in warm corn tortillas topped with cilantro, onions, lime wedges, or salsa.
