Crispy loaded potato skins are the ultimate crowd-pleaser, combining the heartiness of russet potatoes with melted cheese, crispy bacon, and fresh toppings.   • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/2 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes, then poke several holes in each with a fork.
  3. Bake the potatoes directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
  4. Once cooled, slice each potato in half lengthwise and scoop out some flesh, leaving a quarter-inch border.
  5. Brush the insides of the skins with olive oil and sprinkle with salt.
  6. Fill each skin with cheddar cheese and bacon bits, then bake for an additional 10-15 minutes until cheese is bubbly.
  7. Drizzle with sour cream and garnish with green onions before serving.
