  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and sear the chicken for about 5 minutes on each side until golden brown. Transfer to the baking dish and bake for 15 minutes or until cooked through.
  3. Cook pasta in salted boiling water until al dente; drain and set aside.
  4. In the same skillet, sauté minced garlic until fragrant. Add heavy cream and chicken broth, then stir in Italian seasoning; let simmer for about 5 minutes.
  5. Combine cooked pasta with the sauce and mix in half of the Parmesan cheese.
  6. Slice the baked chicken and serve atop creamy pasta, garnished with remaining Parmesan.
