  • 1 cup low-sodium vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1/4 cup fresh mint leaves, chopped
  • 2 teaspoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until softened, about 5 minutes.
  2. Add peas and vegetable broth to the pot; bring to a gentle boil and simmer for about 10 minutes until peas are tender.
  3. Remove from heat and blend until smooth using an immersion blender or by transferring to a regular blender.
