  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil, plus more for drizzling
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a parchment-lined baking sheet, toss halved cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly and roast for about 20 minutes until soft and blistered.
  3. In a food processor, combine chickpeas, tahini, minced garlic, lemon juice, remaining olive oil, salt, and pepper. Blend until smooth; add water if needed to adjust consistency.
  4. Once roasted, gently fold the tomatoes into the hummus.
  5. Transfer to a serving bowl and drizzle with additional olive oil before serving with pita chips or fresh vegetables.
