  • 8 oz linguine or spaghetti
  • 1 cup sliced button mushrooms
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. Cook pasta in salted water until al dente; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté chicken until browned. Add onions and mushrooms; cook until softened. Stir in garlic for the last minute.
  4. Pour in chicken broth and heavy cream; stir in Parmesan cheese until melted. Season with salt and pepper.
  5. Combine pasta with the chicken mixture until well coated.
