  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz fettuccine or penne pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup whipped roasted garlic feta
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 tbsp olive oil (for chickpeas)
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the chickpeas with olive oil, salt, and pepper. Spread them on the baking sheet and roast for 25-30 minutes until crispy.
  3. Season the chicken breasts with Cajun seasoning. In a skillet over medium heat, add olive oil and cook the chicken for about 6-7 minutes per side until fully cooked. Remove from skillet and let rest.
  4. In the same skillet, combine heavy cream and chicken broth; stir in Parmesan cheese until melted.
  5. Boil salted water in a pot; cook pasta according to package instructions until al dente.
  6. Slice the chicken and return it to the sauce. Drain the pasta, then combine it with the sauce mixture.
  7. Serve topped with whipped roasted garlic feta and crispy chickpeas.
