Creamy Avocado Grilled Cheese is a delicious twist on the classic sandwich, featuring smooth, ripe avocados paired with melty cheese between perfectly toasted slices of bread.   • 2 slices sourdough or whole grain bread
  • 1 ripe avocado (about 150g)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Halve the avocado, remove the pit, and scoop it into a bowl. Mash lightly while keeping some chunks.
  2. Butter one side of each slice of bread. On the unbuttered side of one slice, spread mashed avocado and top with cheddar and mozzarella. Season with salt and pepper before placing the second slice on top (buttered side facing out).
  3. Heat a skillet over medium heat. Place the sandwich in the skillet and grill until golden brown (about 3-4 minutes). Flip gently and repeat until both sides are browned and cheese is melted.
  4. Remove from heat, let cool slightly, cut in half, and serve warm.
