  • 1/2 cup unsweetened coconut flakes
  • 8 soft slider buns
  • 2 cups pre-packaged coleslaw mix
  • 1/4 cup mayonnaise
  • Juice of 1 lime
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, coconut flakes, garlic powder, salt, and pepper until well mixed.
  3. Shape the mixture into small patties, about 2 inches wide.
  4. Place patties on a parchment-lined baking sheet and bake for approximately 20 minutes or until the internal temperature reaches 165°F (74°C).
  5. While the sliders are baking, combine coleslaw mix with mayonnaise and lime juice in another bowl until evenly coated.
  6. Assemble by placing each patty on a slider bun and topping it with coleslaw.
