  • 9 lasagna noodles
  • 2 cups fresh spinach (packed)
  • 1 cup vegan ricotta cheese
  • 2 cups marinara sauce
  • 1/4 cup nutritional yeast
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a saucepan over medium heat, sauté minced garlic in olive oil until fragrant. Add marinara sauce and let it simmer.
  3. In a bowl, combine fresh spinach with vegan ricotta until smooth.
  4. Spread a thin layer of marinara sauce in the baking dish. Layer three noodles, half the spinach mixture, and more sauce. Repeat until all ingredients are used, finishing with sauce on top.
  5. Sprinkle nutritional yeast on top before covering with foil and baking for 30 minutes. Remove foil and bake uncovered for an additional 10 minutes until bubbly and golden brown.
  6. Allow to cool for 10 minutes before slicing and serving.
