Ingredients

Scale
  • 4 cups fresh cherries (pitted)
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • 1 pie crust (store-bought or homemade)
  • 2 tablespoons butter (cut into small pieces)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine pitted cherries, sugar, cornstarch, and lemon juice; toss until well-coated.
  3. Roll out half of the pie crust and fit it into a pie pan.
  4. Pour the cherry filling into the prepared crust and dot with butter. Cover with the second half of the dough, cutting slits for steam to escape.
  5. Bake for 45-50 minutes until bubbly and golden brown. If edges brown too quickly, cover with foil.
  6. Let cool for at least an hour before slicing.
