  • 2 tsp baking powder
  • ¾ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 4 oz cream cheese, softened (for frosting)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk flour, baking powder, sugar, and cinnamon until combined. In another bowl, beat butter until creamy; then add eggs and milk, mixing until smooth.
  3. Gradually combine the dry ingredients with the wet mixture until just mixed.
  4. For the filling, mix brown sugar with remaining cinnamon. Place half of the batter in the liners, sprinkle with filling, then top with remaining batter.
  5. Bake for 18-20 minutes until a toothpick comes out clean. Allow cooling before frosting.
  6. For the frosting, beat cream cheese, powdered sugar, butter, and vanilla until fluffy.
