  • 1 can (15 oz) black beans, rinsed and drained
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 3 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Sauté the onion in olive oil over medium heat until translucent, about 5 minutes. Add minced garlic and sauté for another minute.
  2. Stir in the diced sweet potatoes, cumin, and chili powder; cook for an additional 5 minutes.
  3. Mix in the diced tomatoes (with juices) and black beans. Add the chopped chipotle peppers.
  4. Pour in the vegetable broth while stirring; bring to a gentle simmer.
  5. Cover and simmer on low heat for about 20 minutes until sweet potatoes are fork-tender.
  6. Serve hot, garnished with cilantro or avocado slices if desired.
