  • 2 large sweet onions (like Vidalia), sliced into ½ inch thick rings
  • 1 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 cup panko breadcrumbs
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon seasoning salt
  • Cooking oil for frying

Instructions

  1. Slice onions into thick rings and set aside.
  2. Prepare a dredging station with seasoned flour in one bowl, whisked eggs in another, and panko breadcrumbs mixed with seasoning in the third.
  3. Dip each onion ring into flour, then egg, and finally coat with breadcrumbs.
  4. Place shredded cheese inside half of the onion rings and top with another ring. Press gently to seal.
  5. Heat oil in a deep fryer or skillet to 350°F (175°C) and fry the rings in batches until golden brown, about 3 minutes per side.
  6. Drain on paper towels and serve hot with your favorite dipping sauce.
