Cheesy Jack o Lantern Quesadillas are a festive Halloween favorite that combines gooey cheese and crunchy vegetables to create playful jack-o’-lantern faces. This easy-to-make dish is perfect for parties or cozy family dinners, offering a delightful mix of flavors that will have everyone clamoring for more.

  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup Monterey Jack)
  • 1/2 cup black olives (sliced)
  • 1/2 cup sliced bell peppers (preferably orange)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder

Instructions

  1. Prepare your ingredients by slicing bell peppers into fun shapes.
  2. In a bowl, mix the shredded cheese with cumin, paprika, and garlic powder until well combined.
  3. On a clean surface, place one tortilla and spread half of the cheese mixture on one side. Add sliced bell peppers and black olives to create jack-o'-lantern faces before folding the tortilla over.
  4. Heat a nonstick skillet over medium heat and cook each quesadilla for about 3-4 minutes on each side until golden brown.
  5. Transfer cooked quesadillas to a cutting board and cut out cute jack-o'-lantern faces from the edges.
  6. Serve warm with salsa or guacamole for dipping.
