  • 1 cup shelled pistachios, chopped
  • 1 cup pure maple syrup
  • 1 ½ cups all-purpose flour

  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper.
  2. Grate the carrots until you have about two cups and set aside.
  3. In a medium bowl, sift together the flour, baking powder, and a pinch of salt.
  4. In another bowl, whisk together the eggs and vegetable oil. Add the maple syrup and mix until smooth.
