  • 2 large eggs (room temperature)
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 cups shredded carrots
  • ½ cup chopped walnuts or pecans (optional)
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs until frothy. Add vegetable oil and shredded carrots; mix well.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined and fold in nuts if using.
  5. Pour batter into the prepared pan and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  6. While cooling, mix softened cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla until smooth.
  7. Once cooled, frost the bars generously with cream cheese icing.
