  • 2 medium sweet onions, sliced
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, melt the butter. Add onions with a pinch of salt; cook until golden brown (15-20 minutes). Stir in garlic during the last few minutes.
  3. In a bowl, whisk together heavy cream, thyme, salt, and pepper.
  4. Layer half of the potato slices in the baking dish. Top with half the caramelized onions and half the cream mixture. Repeat layers.
  5. Sprinkle Gruyère cheese on top and cover with foil.
  6. Bake covered for 45 minutes, then remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
  7. Let sit for 10 minutes before serving.
