  • 2 cups butternut squash, cubed
  • 1 cup pomegranate seeds
  • 2 cups kale, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper in a bowl.
  3. Spread the squash on a baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  4. While roasting, massage chopped kale with 1 tablespoon of olive oil until softened.
  5. Combine roasted squash with massaged kale and pomegranate seeds in a large bowl.
