  • 1 (30 oz) bag frozen shredded hash browns
  • 6 large eggs
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 1 cup diced bell peppers (red or yellow)
  • 1 small diced onion
  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a large baking dish with nonstick spray.
  3. In a mixing bowl, combine hash browns, half of the cheese, salt, pepper, onions, and bell peppers.
  4. In another bowl, whisk together eggs and milk; season with more salt and pepper.
  5. Spread the hash brown mixture in the prepared dish and pour the egg mixture on top.
  6. Sprinkle remaining cheese over the casserole and bake for 45 minutes until golden brown.
