  • 2 tablespoons Cajun seasoning
  • 2 tablespoons extra virgin olive oil
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Season both sides of the chicken breasts generously with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook the chicken for 5-7 minutes per side until blackened and cooked through. Remove from skillet and let it rest.
  2. Cook fettuccine in boiling salted water for 8-10 minutes until al dente. Drain and reserve half a cup of pasta water.
  3. In the same skillet, sauté minced garlic until fragrant, then add heavy cream and bring to a gentle simmer while stirring.
  4. Gradually whisk in Parmesan cheese until smooth and creamy. If too thick, add reserved pasta water as needed.
  5. Slice the rested chicken and toss it with the fettuccine in the Alfredo sauce until well-coated.
  6. Serve on plates with additional Parmesan cheese if desired.
