  • 1 ripe banana (for the curd)
  • ½ cup granulated sugar (for the curd)
  • 3 egg yolks (for the curd)

  1. Preheat your oven to 350°F (175°C). Grease and flour your baking pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
  3. In another bowl, beat the softened butter until creamy. Gradually add sugar until light and fluffy.
  4. Add eggs one at a time, then mash in the ripe bananas until well combined.
  5. Mix dry ingredients into the wet mixture until just combined—do not overmix!
  6. Pour batter into the prepared pan and bake for 30-35 minutes or until golden brown and a skewer inserted comes out clean. Let cool before topping with banana curd.
