  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 medium zucchini (about 200g), grated
  • 1 cup plain breadcrumbs (100g)
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 cup grated Parmesan cheese (optional, 25g)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Steam the diced sweet potatoes until fork-tender (about 10-15 minutes). Grate the zucchini while they cool.
  3. In a large bowl, mash the sweet potatoes until smooth. Mix in the grated zucchini, eggs, breadcrumbs, garlic powder, salt, pepper, and Parmesan if using.
  4. Form small bite-sized tots with your hands and place them on the baking sheet with space between each.
  5. Bake for 25-30 minutes or until golden brown, flipping halfway through for extra crispiness.
  6. Allow to cool slightly before serving with your favorite dipping sauce.
