  • 4 large portobello mushrooms
  • 1 cup firm tofu, pressed
  • 2 cloves garlic, minced
  • ¼ cup green onions, chopped
  • 2 tbsp low-sodium soy sauce
  • ½ cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the portobello mushrooms and carefully remove the stems.
  3. In a mixing bowl, crumble the tofu and combine it with minced garlic, green onions, soy sauce, and panko breadcrumbs until well mixed.
  4. Generously stuff each mushroom cap with the tofu mixture.
  5. Place the stuffed mushrooms on a greased baking sheet, drizzle with olive oil, and bake for 25-30 minutes or until golden brown.
