  • 2 cups cooked Arborio rice
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying (enough to submerge)

Instructions

  1. In a bowl, mix cooked Arborio rice, Parmesan cheese, eggs, salt, and pepper until well combined.
  2. Take a golf ball-sized amount of the mixture and flatten it in your palm. Place a small cube of mozzarella in the center, then shape the rice around it into a ball.
  3. Roll each ball in panko breadcrumbs until fully coated.
  4. Heat vegetable oil in a deep pot over medium heat until it reaches 350°F (175°C).
  5. Fry the balls in batches for about 3-4 minutes on each side until golden brown.
  6. Remove from oil and drain on paper towels before serving warm with marinara sauce.
