  • 2 sea bass fillets (6 oz each)
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • 1 small shallot, finely chopped
  • 1/4 cup Prosecco
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Finely chop the shallots and season both sides of the sea bass fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Place the fillets skin-side down in the skillet and cook for about 4 minutes until golden brown.
  4. Gently flip the fillets and cook for another 3 minutes or until flaky.
  5. Remove the fish from the pan and set aside. In the same skillet, sauté shallots until translucent (about 2 minutes).
  6. Add Prosecco and lemon juice; simmer until slightly reduced before stirring in butter until melted.
  7. Drizzle sauce over the fish and serve immediately.
