  • 4 lbs beef short ribs
  • 2 cups dry red wine
  • 1 medium onion, diced
  • 2 medium carrots, sliced into thick rounds
  • 1 stalk celery, chopped
  • 4 garlic cloves, smashed
  • 2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 3 sprigs fresh thyme

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season short ribs with salt and pepper. In a large Dutch oven, heat oil over medium-high heat and sear the ribs until browned on all sides (about 4 minutes per side). Remove and set aside.
  3. In the same pot, sauté onion, carrots, celery, and garlic until softened (5-7 minutes).
  4. Stir in tomato paste; cook for another minute before adding red wine. Simmer for about five minutes.
  5. Return short ribs to the pot; add beef broth and thyme. Bring to a gentle simmer.
  6. Cover tightly and braise in the oven for about three hours or until tender.
