  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1.5 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter; press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth; add sugar, sour cream, and espresso powder, mixing until well combined.
  4. Pour the filling over the crust and bake for 45-50 minutes until set but still slightly wobbly in the center.
  5. For the ganache, heat heavy cream until simmering; remove from heat and stir in chocolate chips until smooth.
  6. Once the cheesecake has cooled completely, pour ganache over the top and refrigerate for at least two hours before slicing.
