Russian Honey Cake, or Medovik, is a luscious dessert that features delicate layers of honey-infused sponge cake paired with a rich and tangy frosting. Each bite offers a delightful balance of sweetness and creaminess, making it an ideal treat for gatherings or quiet afternoons at home.

  • 1 cup honey
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp baking soda
  • ½ cup unsalted butter (melted)
  • 1 cup sour cream (full-fat)
  • 1 cup heavy cream (whipped)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together sugar, honey, eggs, and baking soda until combined. Gradually add sifted flour while stirring until smooth.
  3. Pour batter evenly into prepared pans and bake for 20-25 minutes until golden brown. Cool completely.
  4. For frosting, whip heavy cream until soft peaks form; fold in sour cream until integrated.
  5. Assemble by layering cake with frosting in between and on top. Chill for at least an hour before serving.
