  • ½ cup freshly grated Parmesan cheese

  • ½ cup heavy cream

Instructions

  1. Boil salted water in a large pot and cook the tortellini according to package instructions until al dente (about 3-5 minutes). Reserve ½ cup pasta water before draining.
  2. In a skillet over medium heat, cook the pancetta until crispy (about 5 minutes).
  3. In a bowl, whisk together eggs, Parmesan cheese, and black pepper.
  4. Add hot tortellini to the skillet with pancetta. Remove from heat and quickly stir in the egg mixture until creamy.
  5. If needed, gradually add reserved pasta water to reach desired consistency.
