  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni in salted boiling water until al dente according to package instructions. Drain and set aside.
  2. In a skillet, melt 1 tbsp butter over medium heat. Season chicken with salt and pepper, cooking for 6-7 minutes per side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, add another tbsp of butter and sauté minced garlic until fragrant (about 1 minute). Pour in heavy cream and chicken broth; simmer gently.
  4. Stir in Parmesan cheese until melted and smooth.
  5. Slice cooked chicken and return to skillet along with rigatoni; toss everything together until well coated.
  6. Serve hot topped with extra Parmesan and cracked black pepper.
