  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz full-fat cream cheese, softened
  • 1 cup sour cream
  • ½ cup amaretto liqueur
  • 3 large eggs, at room temperature

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan with nonstick spray or butter.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press firmly into the bottom of the prepared pan and bake for 10 minutes. Remove and let cool.
  3. In another bowl, beat cream cheese until fluffy. Gradually add remaining sugar and blend in sour cream and amaretto until well mixed.
  4. Add eggs one at a time, mixing gently after each addition until just combined.
  5. Pour the filling over the cooled crust and bake for 50-60 minutes or until set but slightly jiggly in the center.
  6. Turn off the oven and leave the cheesecake inside with the door ajar for one hour. Refrigerate for at least four hours or overnight before serving.
