Coq au Vin is a classic French dish that combines tender chicken with a rich red wine sauce, smoky bacon, and earthy mushrooms. This comforting meal is perfect for cozy evenings or special gatherings, delivering an unforgettable taste of France right in your kitchen.

  • 4 bone-in chicken thighs
  • 1 cup dry red wine
  • 4 slices thick-cut bacon, chopped
  • 8 oz cremini or button mushrooms, sliced
  • 2 medium carrots, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven over medium heat, cook chopped bacon until crispy. Remove bacon but keep the fat in the pot.
  2. Season chicken thighs with salt and pepper; brown on both sides for about 5 minutes each. Remove from pot.
  3. Sauté garlic and mushrooms in the bacon fat until softened (about 5 minutes).
  4. Deglaze the pot with red wine, scraping up bits from the bottom; bring to a gentle boil.
  5. Return chicken and bacon to the pot; add broth, carrots, and thyme. Cover and simmer on low for about an hour until tender.
  6. Serve garnished with fresh parsley alongside crusty bread or mashed potatoes.
