  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the egg yolk and vanilla extract.
  3. Gradually sift in the flour and cocoa powder, mixing until just combined.
  4. Roll tablespoons of dough into balls and place them on baking sheets, spacing them two inches apart. Use your thumb to create an indent in each ball.
  5. Bake for 10-12 minutes until set but still soft. Allow cooling slightly on the sheets.
  6. To prepare the ganache, heat heavy cream in a saucepan until just boiling, then pour over dark chocolate chips in a bowl. Let sit for a minute before stirring until smooth.
  7. Fill each cookie's thumbprint with ganache using a spoon or piping bag, then allow to set.
