  • ½ cup unsalted butter, melted

  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup whole milk
  • 4 large egg yolks
  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  2. Beat cream cheese in another bowl until smooth. Gradually mix in sugar, sour cream, and vanilla until combined.
  3. Pour the filling over the cooled crust and bake at 325°F (160°C) for about one hour or until set but slightly jiggly in the center. Cool completely.
  4. For the custard filling, whisk milk and egg yolks in a saucepan over medium heat until thickened (about five minutes). Cool before spreading over cheesecake.
  5. Heat heavy cream until simmering; pour over chocolate chips, let sit for five minutes, then stir until smooth.
  6. Spread custard over cheesecake and drizzle ganache on top. Chill for at least four hours before serving.
