  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, and half of the minced garlic. Place in the prepared baking dish.
  3. In a bowl, mix chicken broth, soy sauce, remaining garlic, thyme, and oregano.
  4. Sprinkle uncooked rice evenly around the chicken in the baking dish. Pour the broth mixture over everything.
  5. Cover with foil and bake for about 45 minutes until the chicken reaches an internal temperature of 165°F and the rice is tender.
  6. Allow to rest for a few minutes before fluffing the rice with a fork and serving hot.
