  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced into thick rounds
  • 3 medium Yukon Gold potatoes, chopped into chunks
  • 2 medium onions, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef cubes in batches until golden. Remove and set aside.
  2. In the same pot, sauté diced onions for about 5 minutes until soft. Add minced garlic for the last minute.
  3. Pour in red wine and scrape up browned bits from the bottom of the pot. Let it reduce by half.
  4. Return the beef to the pot along with carrots, potatoes, broth, thyme, bay leaves, salt, and pepper. Stir well.
  5. Bring to a boil; then reduce heat to low and cover. Simmer for about 2 hours or until beef is tender.
  6. Adjust seasoning before serving hot with crusty bread or over rice.
