  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 5 cups fresh spinach
  • 1 cup long-grain rice
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the onion and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook for about 6 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, add onions and cook until translucent (about 3 minutes). Add minced garlic and cook for an additional minute.
  4. Stir in spinach until wilted (approximately 2 minutes), then add long-grain rice and mix well.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  6. Slice cooked chicken into bite-sized pieces and gently fold back into the skillet with the rice and spinach mixture.
