  • 2 cups water or vegetable broth
  • 1 cup hummus
  • 1/2 cup Kalamata olives (pitted)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 2 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until liquid is absorbed.
