  • 1 cup long-grain brown rice
  • 1 ½ tsp turmeric
  • 2 tbsp coconut oil (divided)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain and dry chickpeas. Toss with 1 tbsp coconut oil, salt, and pepper. Spread on the baking sheet.
  3. Roast chickpeas for about 20 minutes until golden brown.
  4. In a medium pot, heat remaining coconut oil over medium heat. Add rice and toast for 2 minutes.
  5. Stir in vegetable broth, turmeric, salt, and pepper. Bring to a boil.
  6. Reduce heat, cover tightly, and simmer for 40-45 minutes until liquid is absorbed.
  7. Combine crispy chickpeas with rice or serve separately on plates.
