  • 1 lb lean ground beef
  • 2 cups fresh spinach, chopped
  • 4 garlic cloves, minced
  • 1 cup plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, sauté the chopped spinach with a pinch of salt until wilted.
  3. In a large bowl, mix together the ground beef, sautéed spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, and Italian seasoning until well combined.
  4. Roll the mixture into golf-ball-sized meatballs and place them on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes or until the internal temperature reaches 160°F (71°C).
